When I was a child my mother or father (depending on who was cooking that night) made a wonderful Hungarian Chicken. It’s full of no no ingredients now, butter, sour cream. So I updated it and am very happy with how close it comes to what I remember. I found it truly brilliant!

onion chopped fine

coconut oil – about 2 table spoons for each piece of chicken

red pepper sprinkeled on chicken to taste – more red pepper makes it hotter

greek plain yogurt – one or two table spoons per piece of chicken

Heat Oven to 350. Put into an oven safe dish with a lid – onion, coconut oil, and chicken.  Place in oven, lower temperature of oven to 250, and let cook for 2 to 3 hours or more. Take dish out of the oven and put in the greek yogurt. If there is a lot of chicken take the pieces out and put greek yogurt in between layers of chicken. Cook for another 1/2 hour.

Serve on a bed of rice or noodles under the chicken. Potatoes also compliment the meal in place of the rice or noodles.
